I'd like to use Everything at work but the following statement in the privacy page raises concern to our IT guy

Debug logs are deleted after 7 days.
Crash dumps are deleted after 7 days.
Any information collected by voidtools.com will not be shared with anyone.

What information is actually collected by voidtools.com?
Is there any way file names or file content or other sensitive data would be sent externally? I mean with the lite version or the regular one but without any server feature enabled.

AFAIK, debug logs or dumps are specifically generated by the user & it is up to the user to forwarded them to voidtools.
Nothing automatic.
So unless you specifically do it, it's not happening.

Correct. Everything does not access the internet. Two exceptions: If you enabled to check for updates on startup, it will read a single file on the voidtools website. And if you press F1 for help, Everything will open the relevant webpage in your browser.
The voidtools privacy policy is very strict. For example: for fighting spam it would be very useful to check if e-mail addresses are in a central anti-spam database on the internet. Not allowed because of privacy considerations (this is not an invitation btw; you will be 'caught' regardless ).
